Banana Buckwheat Chia Muffins

These banana buckwheat chia muffins were inspired by an awesome reader. A while ago a recipe I posted called for chia seeds. Being new to the idea of them, she inquired about what else she could use them for, and one of the things I suggested was to use them in muffins.

I love to wake up on a weekend morning and whip up a batch of these muffins to enjoy warm, topped with some coconut honey spread or almond butter.

These muffins are moist and delicious with the added benefit of essential fatty acids, fiber, and protein from chia seeds, and are made with gluten free buckwheat flour, a healthy low glycemic whole grain. Plus they make the kitchen smell lovely.

Banana Buckwheat Chia Muffins

INGREDIENTS

  • 1 cup buckwheat flour
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp sea salticon
  • 1/2 cup coconut sugar
  • 1 Tbsp chia seeds
  • 1 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened applesauce
  • 2 very ripe bananas, mashed

DIRECTIONS

  1. Preheat oven to 350°
  2. Combine dry ingredients together in a large bowlicon
  3. In separate bowl, add wet ingredients and mix well
  4. Add wet ingredients to dry ingredients and mix until thoroughly combined, batter will be fairly thick but should be able to be stirred, if too thick add water to loosen up a bit
  5.  Grease muffin tins and fill 3/4 full with batter
  6. Bake for 15 minutes

Let muffins cool slightly and enjoy!

    Knowing how to bake a good muffin is an important skill for a guy. I find that baking muffins for a girl is the easiest way to win her heart. This recipe is great and it can also be easily changed to banana-chocolate blueberry muffin by removing the chia seeds, ginger, apple sauce and replacing it with blueberries and chocolate chips.

      Baked goods can definitely be the way to many a hearts! The recipe variations you mention sound great, except you’ll want to leave the applesauce in or you’ll have dry muffins which will not make the girls happy lol :) I actually add dark chocolate chips to my muffins sometimes, it’s goes yummy with bananas.

    Thanks for sharing this recipe. I love recipes like this that are a bit different from the typical muffins. I have never used buckwheat flour but am curious to give it a try. Are these muffins quite dense? It seems like they might be based on the picture. Have you tried freezing them? I like to be able to freeze small batches of baking for my kids lunches at school.

      My pleasure, Tanya! Even though they look dense they’re actually super light and fluffy, and super moist. They never make it into the freezer at out house, they’re usually long gone before that lol! But that’s a great idea for your kid’s lunches, love it! Let me know how it turns out for you :)

    Ohhh these muffins sound really nice and tasty!

    I’m a terrible cook and things never seem to set in the middle so I gave up baking a while ago!

    I like the fact you use chia seeds, I usually have these in a protein shake but what I’ve never used before is Buckwheat Flour or Coconut Sugar – are they hard to get hold of?

      Totally know what you mean, when I lived in high altitude I had so many epic baking fails lol! Never could seem to get it right there. It’s been great getting back into it, of course being out of the mountains has helped haha! I hope you will give these a go and enjoy them :)

      I buy my buckwheat flour and coconut sugar on Vitacost (which can be found in my shop) since they have the cheapest prices and fast shipping, but you can get both at most health food stores as well.

    Jess thank you for passing along this recipe for the muffins. I got so busy with my day job that I just quit baking for lack of time. My husband started making his own Choc Chip Cookies but if I can get him to try these muffins they will be a much healthier snack. I’ve read that chia seeds also help the bodies resistance to Insulin and help lower cholesterol. Are these, by any chance, related to the “chia pet” commercials you see on TV?

      My pleasure Susan! Trust me, I know the last thing I want to do is cook and bake when life gets hectic. That’s why I’m all about quick and simple healthy options. These muffins are really tasty, and definitely chia seeds are a heart healthy food.

      Funnily enough, chia seeds are what sprout up in those little chia pet critters lol! I think it’s funny that it started as a cute little novelty, and since the health benefits have been realized, suddenly the chia pet people are selling chia seeds for health as part of their line up. Oh boy…

      P.S. Since your husband likes chocolate chips, try adding some dark chocolate chips to these muffins! I’ve done it, and it’s deelish with the bananas :)

    1. Mel I feel terrible, you did everything right, this was totally my mistake! It’s actually 1 Tablespoon baking powder NOT baking soda. Thanks to your comment, I looked at the recipe and realized there was a typo. I have updated it and am sincerely sorry for your botched muffins :((( These really are great and I hope you will give them a second chance!

    My mouth is watering at the thought of banana and buckwheat – two of my favourite ingredients! Then I scrolled down to the ingredients list and saw even yummier ones – I am definitely going to make these muffins. How long can they keep for? Also would ginger make it taste a little bitter?

      Hope you enjoy your muffins Lily! To be honest, ours are usually gone by the following day so I’m not sure how long they would keep. I would imagine they should be fine for up to couple days, but you may want to refrigerate them I don’t notice a bitter taste at all with the ginger but if you’re concerned about it you can just leave it out :)
