Turkey lettuce wraps are a quick, super easy, and tasty way to do a healthy weeknight meal. They are light, but packed with plenty of lean protein and fiber to fill you up on their own, or you can always add some veggies on the side to compliment them.
This recipe makes about 8 decent sized wraps, so for two, if this is all we’re having, we usually have 4 each. When adding a side of veggies, 2 wraps each would probably do, feeding four instead.
Quick & Healthy Turkey Lettuce Wraps
INGREDIENTS
- 1 Tbsp coconut oil OR olive oil
- 1 head butter OR bibb lettuce, rinsed
- 1 pound ground turkey
- 2 garlic cloves, minced
- 2 inch piece of fresh ginger, peeled and minced
- 4 scallions, sliced (reserve some green tops to add just before serving)
- 4 Tbsp tamari OR soy sauce
- 2 Tbsp rice vinegar
- 2 Tbsp honey
- 1 tsp crushed red chili flakes
DIRECTIONS
- In a small bowl, combine tamari or soy sauce, rice vinegar, honey and chili flakes, whisk to combine and set aside
- Heat oil in large saute pan over medium heat, add turkey and cook until no longer pink
- Add garlic, ginger and scallions, and saute for a couple of minutes
- Add sauce mixture and mix to coat everything well
- Spoon filling into lettuce leaves, top with remaining scallions, wrap and enjoy!
Note: You can also top these with things like shredded carrots, bean sprouts, red bell peppers and water chestnuts for a nice crunch. Fresh cilantro also makes a nice addition.
