P.S. If you’re not a beet fan, don’t be scared of this juice. The apple and carrots give it plenty of sweetness to offset the earthiness of the beet :)
ABC Anti-Inflammatory Juice
- 1 large red beet
- 8-10 carrots, depending on size
- 1 medium green apple
- 2 inch piece of ginger
- 2 handfuls of parsley
Wash all ingredients and chop them (peel beets first) so they can fit through the juicer if you have a masticating juicer like I do. Sip slowly and enjoy!
Note: It’s best to use organic produce when possible. Also, it’s not uncommon to experience beeturia where urine or stool have a red/pink tinge after eating beets/drinking beet juice (don’t panic), it’s most likely due to low stomach acid or an imbalance in gut bacteria.
